Sometimes when you are home alone and want to prep up a quick but a healthy meal for one, I’ll usually go for a one pot pulao or pasta where I can put in some good amount of veggies or chicken and be done with it. I bought few avocados to make smoothie but was untouched for few days and then thought why not make a burrito bowl since one of the ingredient needed in guacamole. This is a fun and a quick meal to make where you don’t need to cook a lot of ingredients but just dice and add to the bowl.
Ingredients (Meal for 2):
Avocado – 1
Sweet Corn – 1/2 cup
Lettuce – 1 cup
Onion – 1 (small)
Tomato – 1 (small)
Paneer/Chicken – 1 cup
Rice – 1 cup
Lemon – 1 (small)
Green Chilli – 1/2
Sour Cream/Flavoured cheese cream – 2 spoons
Butter, salt and pepper – as needed
Step 1 – Cut, peel the avocado and smash using fork. Chop onion, tomato and green chilli into finer pieces and add in the avocado. Squeeze the lemon and salt as needed. Give it a good mix and guacamole is ready.
Step 2 – Add a spoon of butter in a pan and after it melts add the corn and paneer (or chicken). Give it a good toss and add salt and chilli flakes as per the spice levels needed.
Step 3 – Boil rice (I used basmati rice but you can with whatever rice you want to) and let it cool down. Make sure the rice is fluffy and its come to room temperature or below, so that it doesn’t get mushy when sauteing. Add a spoon of butter in a pan, add the rice and give it a toss, do not keep in the stove for a longer time as it might become dry. If you like herbed or garlic rice, add few spoons of chopped garlic or herbs like coriander, parsley etc to amplify the flavour. I went with just butter, salt and pepper for the rice. Most common mistake people do when making these flavoured rice is either they try to saute it when its hot/warm or keep it in the stove for long. If its hot its get mushy and doesn’t be fluffy and if its too long it becomes dry. Once the butter is melted, I would suggest maybe a min to saute and take it off.
Step 4 – Chop Lettuce length wise and have it ready
Step 5 – Get a bowl which could fit all the needed ingredients and arrange by having rice in the middle and all other around it. Sprinkle parmesan if you like it. The colourful presentation would be so inviting to eat!
Few things to note:
One major ingredient needed for burrito bowl is the red beans, I’m not a big fan of the red beans so I skipped it. If you need you can add a handful of cooked red beans to the bowl. I went with ready made nachos for this bowl. Healthier option I would do is make roti or chapatti, cut it into strips and bake it for few mins until crispy. This adds the extra crunch needed for the bowl. Another ingredient which I replaced was cream cheese for sour cream, I just didn’t have sour cream at home 🙂 You can add/remove as many ingredients you want as long as you have the basic one like guacamole, lettuce, some cream and crunch.

I wasn’t planning to take step by step pic as I was hungry making this and just wanted to mix everything and eat. After prepping up the bowl it looked really good so I took a pic of it and sent to few friends and posted in Twitter and most of them wanted the recipe to be updated. So this blog will not have any pic other than the bowl 🙂 I’ll try to update when I make it next time!
